Winter Recipes to Warm Up Your Dinner Table

Tonight's dish- Mexican Tilapia Tomorrows dish-Superbowl Sunday Buffalo Chicken Pizza Sticks

One thing I always have trouble convincing my fiance to eat is fish. I love salmon, but never get to eat it! And, lately while on my grocery hunts I've noticed that the price has gone way up. Our solution? One pound of Tilapia from the Price Chopper seafood department was $7! And, the manager there gave us an incredible recipe to go with it. In all fairness, this recipe does not feed 6 people. One pound of tilapia fed 3 adults.

What you will need:

-1 lb tilapia    -1 cup crushed tortilla chips

-lime    -1 cup salsa

Preheat oven to 400 degrees. Place tilapia fillets into Pyrex dish. Pour salsa evenly over the top of fish. On top of the salsa, crumble tortilla chips. Cook for 10-12 minutes. When finished cooking, squeeze lime over top. Enjoy!

Hi Class of 1945. If you need help getting the work out there is a FaceBook page titled "If youRead More grew up in Rockville." Although most of the conversations are about reminiscing yester-year we do have quite the size crowd. Currently we stand at 2080 members & we add approx 10 new members a week. So I would be happy to help spread this word if you like. Carl Slicer. From Vernon & Class of RHS 1976. cslicer@BestHire.com Tel. 872-0055.
