Ribbon Cut at Simply Thai in Vernon

Vernon residents Tosak Chuaviriya and his wife, Christine, opened the restaurant at 409 Hartford Turnpike about three weeks ago.

Mayor Daniel Champagne on Tuesday formally welcomed Vernon's newest restaurant to the business community with a traditional ribbon-cutting ceremony at Simply Thai.

He was joined by state Rep. Claire Janowski.

Vernon residents Tosak Chuaviriya and his wife, Christine, opened the restaurant at 409 Hartford Turnpike about three weeks ago after the longtime owners of the Lotus retired.

Before cutting the ribbon, Champagne welcomed the staff with a mayoral proclamation.

Members of the lunchtime crowd on Tuesday openly complimented Chuaviriya on his dishes.

The fresh spring rolls, served with peanut and chili sauces, drew a lot of attention.

Other appetizers on the menu include spring rolls and golden bags - deep fried minced chicken with a spring roll skin served with a plum sauce.

The menu includes a variety of ride and noodle dishes and curry and duck entrees.

One of the chef's choices is a red snapper deep fried and topped with a chili sauce. The sauce does not overwhelm your taste buds but has just enough kick to keep them honest.
